Ata Dindin: Pepper Sauce

So, my fellow readers, I posted a picture of my quick Ata Dindin on a Facebook group called So You Think You Can Cook.... and guess what? I've had a lot of request for the recipe.

So here is how I achieved this "beautifully delicious" stew (yes I know I am blowing my own trumpet...please let me oooooo)

"Pepper Stew" is a dish which is quite popular in most Nigerian households. It is quick, easy and hot!!!! however, you can play with the recipe and make it your own by either reducing or increasing the hotness.. depending on your palate.

So I say... Have fun and enjoy

Ingredients
Medium-sized tomatoes (x5)
Scotch bonnet pepper (x6)
Red ball pepper: tatase (x1)
Onion (x2)
Vegetable oil (3 cookingspoonful)
Knorr chicken cubes (x2)
Salt
Curry (1 teaspoonful)
Thyme (1/2 teaspoonful)
Meat (boiled and grilled gizzard and tripe)

Instructions
  1. Blend the peppers, tomatoes and 1 onion.
  2. Pour in a large microwaveable bowl and heat it up in the microwave for 20 minutes
  3. Using the microwave saves time and boils the mixtures quicker in order to remove excess water
  4. Place a pan on medium heat, and pour in the oil. Heat for 1 minute
  5. Add a chopped onion bulb and let fry for 1-2 minutes on medium heat.
  6. Pour in the pepper mixture and let fry for a minimum of 5 minutes.
  7. Add the grilled meat; seasoning (curry and thyme) and the stock cubes
  8. Add salt to taste
  9. Let simmer on medium heat for another 5 minutes; this time the oil will be on top of the sauce
  10. Voila.... Food is ready

Your girl,
TL

NB: This sauce can be served with Rice, Boiled Yam, Boiled Plantain and even the infamous Agege Bread
