Akara: Bean Fritters

This is yet another popular snack in Nigeria.

The Yorubas and the Igbos call it "Akara"; the Hausas call it "Kosai"; and Ghanaians call it "Koose"; and often eaten on its own as a snack, with bread, with millet or corn porridge.

Another interesting fact is that it is also popular in Brazil; where it is called "Acaraje"

The mixture is made up of peeled and blended white or brown black-eyed beans, onions, peppers and spices.

Ingredients
White or brown black-eyed beans (2 cups)
Onion (x1)
Grounded crayfish (2 tablespoonful)
Scotch bonnet (x1)
Knorr chicken cube (x1)
Salt
Vegetable/sunflower/palm oil (Sunflower oil is used in this recipe)
Instructions
  1. Peel the beans: add warm water to a big bowl and pour in the beans, immediately start peeling the beans by rubbing your palms; use a sieve to drain the water and the beans shaft; continue the process until the beans are peeled.
  2. Soak the peeled beans for a 2 and half hours with warm water


    3. Blend with half an onion and pour into a mixing bowl
    4. Chop the remaining half of the onion and the pepper.
    5. Add the mixture to the blended beans
    6. Add the grounded crayfish and stock cubes
    7. Add salt to taste

                      
    8. Mix it all together with a spoon or spatula (medium consistency)
    9. Heat oil in a frying pan on medium heat
   10. Use a table spoon to scoop the mixture into the oil
   11. Fry each side for 3 mins until golden brown and change the sides until they are both golden brown

                     
   12. Voila!!!! Enjoy!!!!


Please Note: 
- If the oil is not hot enough, Akara tends to soak up a lot of oil 
- Always do a heat test by dropping a bit of the mixture, if it is hot enough, the ball will raise back up asap. 
- Ensure you leave enough room in the frying pan when frying the Akara.
- Only fry on medium heat and ensure the oil is hot enough; and not too hot, as the Akara will only only fry on the outside and not inside.
