This Recipe focuses on Spring Green with Smoked Catfish and Kidney.
Ingredients
Spring greens (300g)
Red ball peppers (x2)
Scotch bonnet peppers (x3)
Tomatoes (x4)
Medium-sized Onion (x1)
Olive Oil (2 cookingspoonful)
Smoked catfish (x2)
Kidney (x1: Cut into 5 medium pieces)
Curry powder (1/2 tablespoon)
Thyme (A pinch)
Knorr chicken cube (x4)
Instructions
- Blend the tomatoes, peppers and an onion.
- Slice the spring greens and wash with cold water.
- Season the kidney with Thyme, Rosemary, Curry powder, Knorr Chicken cube and salt.
- Cook for 10-15 minutes on medium heat.
- Soak the smoked catfish in hot water (boiled) for 5 minutes.
- Chop the remaining onion bulb into cubes
- Heat the olive oil; and add the chopped onion and fry for 11/2 mins.
- Add the blended pepper mixture and let fry for another 5 minutes on low heat
- Add the boiled kidney and let cook on medium heat for 3-4 minutes
- Add the smoked catfish and simmer for 2 minutes
- Add the drained Greens and let simmer for 3-5 minutes on low heat
- Voila!!!! Food is ready
N.B: This can be served with Boiled Rice, Yam, Plantain, Eba, Fufu, Pounded Yam, Amala, Wheat, Ground Rice, or any other Side Dish of your choice.
