Nigerian Concoction Rice

Some call it "concoction" and some call it "management rice"; whatever we all choose to call it depends on our individual memories of this classic dish. 

This rice dish is an "emergency dish"; which is normally cooked just to fill up tummy space when hunger strikes. The difference between this dish and the classic Jollof Rice is that the ingredients used are quite unusual in comparison to that of Jollof Rice. This dish can be experimented with and you can try any ingredient.... An example is IRU (locust beans)... which gives the dish a more local acquire-taste. 

This dish is perfect for families, students or bachelors/ladies who just can't be bothered to cook a proper meal.

Ingredients
Rice (2 cups)
Medium-sized tomatoes (x3)
Scotch bonnet pepper (x1)
Crayfish (1 handful)
Onion (x1: Chopped)
Curry powder (1/2 teaspoon)
Thyme (1/2 teaspoon)
Knorr chicken cubes (x2)
Salt
Vegetable oil (1/2 cookingspoonful)

Instructions
  1. Wash the rice with hot water and set aside
  2. Heat the oil on medium heat for some seconds
  3. Add the chopped onion and fry for 2 minutes on medium heat
  4. Add blended tomatoes and peppers
  5. Let cook for 4  minutes
  6. Add the curry, thyme and stock cubes
  7. Pour in the rice and stir in for 3 minutes; add salt to taste
  8. Add 2 cups of water and cover the pot to let rice simmer on medium heat for 15-20 minutes
  9. Once water is dried; rice should also be fluffy and not moist. 
  10. Stir
  11. Voila !!!! Food is ready!!! Enjoy

N.B: This dish can be served with any meat of your choice; I used chicken wings; and it can also be served with Fried Plantain, a.k.a, Dodo.
